LOBSTERS
True lobster, American lobster, is the animal with two claws found only in the north Atlantic. Clawed lobsters are found from Labrador to Maryland. An almost identical species is found on the eastern side of the north Atlantic from Norway to Portugal. Spiny lobster or rock lobster is a clawless species found in tropical or Subtropical waters worldwide.
PRODUCT FORMS
American lobsters are sold live and can be held alive out of water for up to 36 hours depending on holding conditions. For best results, hold live lobsters in an aerated salt water tank. American "clawed" lobsters are also available whole, steamed, or as cooked meat. Both rock or spiny lobsters and American lobster tails are available frozen. American lobster tail is marketed as a cold water tail and rock lobster is referred to as a warm water tail.
PREPARATION
Live American lobsters can be broiled, steamed, baked or boiled.
Frozen tails should be thawed then baked or broiled.
